Nduja, Parsley and Lemon Penne

This delicious dish is super fast to make. By the time your pasta is cooked the sauce is ready.



Nduja (Calabrian: [nˈduːja]) is a spicy, spreadable pork sausage from the Calabria region of Italy. It is a salume that comes from the area around of Spilinga.
Ingredients
Penne Pasta
Garlic
Butter
Nduja
Parmesan
Squeeze of Lemon Juice
Cream if desired
Parsley
Method
Melt butter and add crushed garlic
Cook for a few minutes on low heat. Do not burn the garlic!
Add the Nduja and stir until melted
Add a splash of pasta water
Add a spoonful of cream if desired
Add finely grated Parmesan
Add chopped Parsley
Add a squeeze of lemon juice
Now add the cooked past ensuring it is not overly cooked but Al Dente
Stir to combine and add some black pepper.
Serve and garnish with Parsley and more Parmesan
