Chicken, Butter Beans and Grapes in Mulled Wine

Ever wondered what to do with excess or leftover Mulled Wine?
It doesn't overpower this dish and adds a delicious flavour that complements the different textures of Butter Beans and Grapes.

Ingredients
Chicken. (any cut. I used leftover meat from a roast)
Onion
Garlic
Celery (not essential)
Tin of Butterbeans
Black Grapes (10-15)
Bay Leaf
Chicken Stock
Mulled Wine
Method
Fry onions and celery until softened (4-5 mins)
Add Garlic and fry to 2 mins
Add Butterbeans (drained)
Add Chicken Stock and Bay Leaf
Add 2 large glasses of Mulled wine
Simmer for 40 mins
Add Grapes and simmer for a further 20 mins
Season to taste with salt and pepper.
Use 1 teaspoon of cornflour or 2 of plain flour in a little cold water to form a paste.
Add gradually and stir to thicken sauce as required.
You my wish to add herbs of your choice. Parsley for colour, Thyme, Sage etc
