Recipe for Cottage Pie with Parsley Mash

Serves 2

300-400 grams of Minced Beef

1 Onion

1 Carrot

Frozen Peas

1 Beef Stock Cube

2 tsp of Fresh or Dried Thyme

2 Cloves Garlic (if required)

Tomato Puree

Handful of fresh Parsley

Potatoes


Fry the onion until softened

Add diced carrot and garlic

Add mince and fry until lightly browned

Add beef stock and Thyme

Add peas


Simmer with a lid on for 45 minutes

Add a tablespoon of tomato puree


Cook for another 5-10 minutes with lid on


Transfer to suitable ovenproof dish


Boil potatoes in some salted water until soft

Meanwhile blend a little milk with fresh parsley


Mash the potatoes when ready and add the parley milk

Mashed to a smooth consistency


Top the prepared cooled mixture with Mash

A nice addition is thinly sliced courgette on the top of the source prior to adding the mash


Cook in the oven for 40 mins or until top is browned
