Sausage Rolls

For the real taste of Christmas

These Sausage Rolls have a bit of spice and fruit and are delicious hot or cold
Ingredients
Sausage meat
Onion
Garlic
Pepper
Mixed spice powder
Parsley
Herbs (Sage, Thyme)
Apricots or Apple
Orange peel Grated
Beaten Egg (for brushing on pastry before cooking)
Puff Pastry
Method
Make sure the puff pastry is left out of the fridge and thawed if frozen or rested for 15 mins if not.
Sautee onions and garlic until softened
Finely chop parsley
Lightly sautee apricots or apples
finely grate a little Orange peel
Put the sausage met meat in a large bowl
Add all the ingredients
Add a pinch of salt and a teaspoon of mixed spice
Mixed together with your hands until all ingredients are incorporated.
Put bowl on the fridge for 30 mins or longer if you wish.
I always but puff pastry in a roll
Unroll the puff pastry and lay it out on a floured surface or
If you are using a block roll in out into an oblong or square ensuring not to roll in too thin
About a 1 pound coin in thickness
Turn it over while roll to get a dusting of flour on each side but only a dusting
Using your hands rolls the sausage meat mixture into sausage shapes according to how wide the pastry is and place it on the pastry leaving enough room so that when you cut the pastry to roll it there is a bit of overlap to seal the roll.
Continue until you have used all the pastry and have several long sausage rolls.
At this point you can use a sharp knife to gently cut the rolls into the desired sizes before applying the egg wash or do it after you have applied it.
Place the rolls onto greaseproof paper in a roasting tin and place in a preheated oven.
I find that around 175 c is a good temperature so that the pastry doesn't brown to quickly before the inside is cooked. Leave for up to 40 mins checking regularly.. When the pastry is nicely brown. Take them out of the oven and cut into one of the rolls to check it is cooked.
At this point if you want them a little browner turn to oven off and return then to the oven and leave them for another 10 mins or longer. jusy make sure to check them.
